Red Sauce Arrabbiata Pasta

Hello friends,

Here I start my first post with one of my favorite recipes – Arrabbiata Pasta, or Red Sauce Pasta.

Pasta has become like a universal dish these days, loved and accepted world wide. I haven’t met anyone personally, who does not like pasta. Be it any, cheesy white sauce, or tangy tomato red sauce, or mixed white and red sauce creamy pasta, or spicy Indian style version of the same loaded with veggies. Uff, my own descriptions here makes me hungry! 😉

Anyways back to the point, One of the most simple, quick dish variant recipe is given below.

I will summarize it in 3 simple steps – Pasta boiling, Sauce prep. and Veg cooking.

Servings: 3-4, Preparation time : 1/2 hour

Ingredients

For Pasta

500gms fusilli pasta (or any pasta you like)

½ cup refined oil

2 medium sized (m-s) onions – sliced

1 m-s tomato – chopped

3 m-s capsicum – cut into half and sliced (one red, yellow and green each)

1 green chili -chopped

3 table spoons olives – sliced (here I used black)

Salt to taste

 

For Arrabbiata Sauce

1 table-spoon olive oil

5-6 fresh tomatoes – peeled and pureed

4-5 cloves of garlic – mashed to make a paste

1 tea-spoon oregano

1 tea-spoon chilli flakes

3 table-spoon tomato ketchup

Salt to taste

 

For Garnish

Half cup Grated cheddar or mozzarella cheese

Method:

Boil about 4-5 glasses of water in a deep pan. Add 1 teaspoon of salt and 1 teaspoon of oil to this water. This will help the water to boil quickly and pasta shall not stick together. As the water starts boiling, add the pasta to it. Cook it until al-dante(easy to cut by your teeth). Do not overcook it as the pasta will start to break.

As the pasta is done, drain the excess hot water, rinse it with some cold water, drain it and keep aside.

Start preparing the sauce on the other side, while the pasta is boiling. To olive oil in a pan add the tomato puree. Keep the flame high. Keep stirring to dry out the excess water of the puree. After 5 mins, add the garlic paste to it. Also add salt, oregano, chilli flakes and ketchup after it. We don’t have to make it really thick. Only the liquid portion should dry off. In about 5 more minutes, it should be done. So, in total 10 mins only. Turn off the flame. And that’s it! TAASSTEEE it! (don’t you want to :P) I know, I know, this sauce is heavenly! 😉

3Now in another pan, start preparing the vegetables. Heat the oil and sauté sliced onions. Add green chilli, capsicum and sauté for some time. Add tomatoes, olives and sauté further. Add salt and mix. We need to cook the vegetables till they are soft, BUT, still some crunchiness is there. We do not have to cook them completely. Now, mix the boiled pasta and arrabbiata sauce to it. Mix, mix, mix, and we’re almost done! Serve hot in your plates and garnish with some grated cheeeeeese. 😀

p.s. Add any vegetables you like, corn, baby corn, mashrooms etc etc. It will only make it more delicious 🙂
